A Brief Overview of Attars
Attars, also known as “ittar” or “othr,” are natural, plant-based perfumes that originated in South Asia, particularly in India and the Middle East. They are made from the steam distillation of flowers, herbs, spices, and other natural ingredients into a base of sandalwood oil or another natural oil.
Unlike Western perfumes, which are often made with alcohol and synthetic ingredients, attars are alcohol-free and use only natural ingredients, making them popular among those who prefer more traditional or natural fragrances. They actually improve with age rather like a good wine!
Attars are usually highly concentrated and long-lasting, requiring only a small amount to be applied to the skin.
The traditional method of producing attars in North India, particularly in Kannauj (often regarded as the perfume capital of the region), employs a hydro-distillation technique that relies on steam generated from boiling water to extract aromatic compounds from botanicals. This process, known as the Deg-Bhapka method, has been practiced for centuries and is indeed a form of steam distillation, where volatile essences are carried by steam and absorbed into a base oil.
The core apparatus consists of two primary copper vessels: the Deg, a large still (typically holding 10 to 160 kilograms of raw materials) in which water and the chosen botanical materials—such as flowers, herbs, roots, or even baked clay for specific scents like mitti attar—are placed and heated over a furnace called the Bhatti; and the Bhapka, a smaller receiver vessel (containing 5 to 10 kilograms of base oil, usually sandalwood oil) connected to the Deg via a bamboo condenser pipe known as the Chonga. The Bhapka is submerged in a cooling tank (Gachchi) to facilitate condensation, allowing the steam to release and infuse the base oil with fragrance.
Once distillation concludes, the mixture settles in a leather container (Kuppi) to separate the pure attar from excess water.
This same Deg-Bhapka setup produces all varieties of attars by varying the raw materials introduced into the Deg—for instance, rose petals for Gulab attar, jasmine for Motia attar, or agarwood for Oud attar—while repeating the distillation cycle as needed to achieve desired concentration. The process is labour-intensive, often spanning several hours to days per batch, and emphasises natural, non-chemical extraction to preserve the attar’s therapeutic and olfactory qualities.
